Denso e misterioso, l’Occhio di Pernice rivela un bouquet complesso e avvolgente con aromi di prugne secche e datteri, propoli, panpepato, malaga e tabacco. In bocca è dolce e speziato e ritornano le note olfattive ampliandosi con quelle di albicocche secche e nocciola affumicata con piccole sfumature di spezie natalizie. Un vino che sorprende con ogni sorso per la sua concentrazione e profondità. La persistenza retrolfattiva è incredibilmente lunga.
